Vitamin A is also called Retinol. It is a fat-soluble Vitamin and as it stores in the body you do not need it every day.

It is necessary to the creation of the purple in the retina I.e., vision in dim light. It aids in growth, development and in maintaining healthy hair, skin, mucous membranes, bone growth, reproduction and it strengthens the immune system as well as promoting normal development of teeth, soft and skeletal tissue.

The Vitamin A content in vegetables also has antioxidant properties, which protect cells from toxic damage of every day oxidation. As Vitamin A contains strong antioxidant properties, clinical trials suggest that it may protect against pollutants in the environment.

During food preparation Vitamin A can be lost due to cooking and storage.

During storage keep vegetables and fruits covered and refrigerated to prevent this from happening.

Whenever possible use raw fruits and vegetables.

Instead of boiling, steam vegetables.

If you are not a vegetarian and do eat meat, it is best to braise, bake or boil meats instead of frying them, as during frying in fat some of the Vitamin A is lost.

Most people take Vitamin A as a good quality multivitamin as it combines well with calcium, phosphorous, zinc, the B-complex, Vitamin C, Vitamin D and Vitamin E.

Exceeding the intake of Vitamin A (15000IU) can cause some signs of toxic effects, which have been found to include nausea, vomiting, dizziness, bone pain and muscle aches as well as hair loss. Excessive consumption of Vitamin A can also lead to liver and spleen damage.

Vitamin A deficiency include symptoms like dry eyes, poor night vision and problems with the cornea. Sometimes the symptoms you can experience are skin problems, dry scalp, frequent colds and respiratory infections.

By eating a varied, healthy and balanced diet you should be able to get all the Vitamin A you need in your food.
